Cheeseburger Soup



1 Pound extra lean ground beef ( I used ground turkey)
1/2 of a large onion, chopped
1 cup of chopped celery
1 green bell pepper, chopped
1/2 cup of chopped carrots
3-4 cups of chicken broth
lots of pepper
2 tablespoons of Parkay butter
8 ounces of shredded sharp cheddar

Brown beef with onions in a large saucepan; drain. Add celery and bell pepper and cook for 1 minute. Add the carrots, chicken broth and pepper, making sure the broth covers everything in the pan. Bring to a boil, reduce the heat, cover and simmer for 30 minutes. Add the butter and cheese over medium heat until the cheese is melted and well blended. Enjoy.
