Banana Cookies

I love Banana Nut Bread and these cookies taste just like it. I like the cookies right from the oven but put some frosting on them and WOW, double WOW. You could almost say they're good for you, melt in your mouth good. This recipe makes about 75 cookies and everybody will want more than one.

Banana Cookies

1 1/2 cup of Shortening
1 1/2 cup of brown sugar
2 eggs
3 bananas, mashed
1/2 teaspoon of salt
2 teaspoons of baking soda
3 1/4 cup of flour

Pre-heat oven to 350 degrees. Cream shortening and sugar, add eggs and bananas, mix well. Stir in salt, soda and flour. Drop by tablespoon onto a greased cookie sheet. Bake 11-12 minutes. Cool and frost.

Icing

2 tablespoons of Parkay butter, melted
2 cups of powdered sugar
1/2 teaspoon of vanilla
2 tablespoons of milk

Mix butter, milk, vanilla and powdered sugar, stir till spreading consistency. If its too runny and more powdered sugar, if its too thick and more milk.

**I put too much icing on them, they only need a thin layer of icing.
