Snickerdoodle Blondies

I got this recipe from browneyedbaker.com. She has a list of her top ten bar desserts so I decided to try a few. The first one I'm going to try is the Snickerdoodle Blondies. They were fabulous, just like the snickerdoodle cookies, but better. The bars are very moist and no scooping dough for cookies and standing by the oven waiting for them to bake. My Amy who loves Snickerdoodle cookies would love, love, love these. My test subjects were a little skeptical of the name but they tried them anyway. This recipe called for unsalted butter which I do not have so I used my salted butter and cut out the salt. It also called for nutmeg, which again I'm out of so no nutmeg.

Snickerdoodle Blondies
1 cup of butter (2 sticks) (room temperature)
2 eggs
1 tablespoon vanilla
2 cups of packed brown sugar
1 teaspoon cinnamon
2 teaspoons baking powder
2 2/3 cup flour
Topping
2 tablespoons of sugar
1 teaspoon of cinnamon
Preheat oven to 350 degrees and spray a 13 x 9 pan with oil. Beat together the butter, eggs, vanilla and brown sugar. Add the cinnamon and baking powder. Stir in the flour and spread into your prepared pan. Mix the sugar and cinnamon topping and sprinkle over the top. Bake for 25 - 30 minutes....enjoy.
