Banana Nut Bread*****

I got this recipe from my sister Terri and it is one of my all time favorite recipes. I make this one at Christmas time for the Teachers in small loaf pans, I have also made these in muffin tins.

Banana Nut Bread

1 cup of shortening
3 cups of sugar
1 teaspoon of vanilla
1 teaspoon of banana flavoring
1 teaspoon of butter flavoring
4 eggs
1/2 cup of buttermilk (1/2 cup of milk and 1 tbl of vinegar, let sit 10 min)
2 teaspoons of baking soda
1/4 teaspoon of salt
3 1/2 cups of flour
1 cup of chopped pecans
6 small bananas (mashed)
Pre heat oven to 350 degrees and spray the pan with oil. Cream sugar, shortening and flavorings. Add eggs one at a time. Stir in buttermilk, soda, and salt. Add flour and stir well. Stir in pecans and mashed bananas. Fill pans half full and bake until a toothpick inserted comes out clean.
2 loaf pans - 70 minutes
8 mini loaf pans - 35 minutes
24 muffin cups - 25 minutes
