Oatmeal Cake

For those of you who think they don't like oatmeal, try this cake. It's delicious and good for you because it has oatmeal in it. This is a good way to sneak it in someones diet. My Boss was eating a piece and He said "this is good Val what is it"? I told him oatmeal cake and he said "good thing I didn't know it or I wouldn't have tried it". My son Mike would request this for his birthday cake.

Oatmeal Cake
1 cup of brown sugar
1 cup of sugar
1/2 cup of Parkay butter
2 eggs
1 teaspoon of cinnamon
1 teaspoon of baking soda
1/2 teaspoon of salt
1 1/2 cup of flour
1 cup of quick oatmeal

Pre-heat oven to 350 degrees. Microwave 1 1/2 cups of water on high for a 2 minutes, add oatmeal and stir. Place the oatmeal in the refrigerator while you mix the other ingredients. Cream the sugars in soft butter. Add the eggs. Add the cinnamon, soda and salt. Mix well. Add he flour, the batter will be thick. Add the oatmeal and stir well. Pour the batter into a oiled and floured 13 x 9 pan. Bake for 25 minutes. While it is baking mix the glaze.
Glaze
1 stick of Parkay butter
1 1/2 cups of brown sugar
3/4 cup of milk
Bring the ingredients to a boil and simmer for about 5 minutes. Slowly pour over the cake as soon as you remove it from the oven. I pour it onto the spoon and let it flow over the cake. Place it back in the oven under the broiler for 3-5 minutes. Watch it carefully or it will burn. I like to serve it warm....ummmm.
