Kiser Cornbread Stuffing *****

I would like to Thank the Kiser family for this wonderfully delicious recipe. Some people like Stove Top Stuffing, all others will love this recipe. It should be made a day ahead and then sit overnight in the refrigerator or frozen. Since it has quite a bit of meat in it, it is a meal in itself. It is a lot of work but I give it 5 stars. I took a pat of butter and taste tested the cornbread to make sure it was OK for the stuffing, YUM, it's OK!

Kiser Cornbread Stuffing (16 x 11 pan)

2 - 6.5oz pkgs of Martha White Yellow Cornbread (not sweet)


3 boneless skinless chicken breast


1 lb of hot ground sausage


2 onions (chopped)


4 ribs of celery (chopped)


40 - 50 oz of chicken stock


7 oz of dry cubed bread stuffing (4 cups)


Sage to taste (I used 1/2 teaspoon)


1 teaspoon Pepper or to taste

Prepare the cornbread according to the instructions on the package and bake in a 13 x 9 pan. Boil the chicken about 20 minutes or until cooked, remove and reserve the broth. Let the chicken cool and then shred. Brown the sausage in a large skillet with the onions. Add the celery and simmer for a few minutes. Crumble the cornbread into the 16 x 11 pan and add the cubed bread stuffing. Add the sausage mixture, chicken, the broth from the chicken, sage and pepper. (Her mother would always buy a new jar of Sage every year.) This mixture should be VERY wet since the cornbread and bread cubes will soak up a lot of the stock. In photo (#3) I pushed down in the center of the mixture to show you how much liquid is in mine, almost up to the top. Her grandmother would reserve some cornbread in case the mixture is too wet. This should be mixed up the day before and refrigerated or frozen. Bake at 450 degrees for 50 - 70 minutes or until it bubbles and a nice brown crust forms on top. Serve with turkey gravy and cranberry sauce. I took some to work and re-heated it in my electric skillet.

Camo Apron

My second grandson Paxton saw his cousins hot rod apron and decided he needed an apron also. But he needed a camo apron because he is a play like Marine like his aunt Sam. So I purchased a yard of camo material and made him an apron but I had a lot of material left over so I decided to make him a hat also. I saw a pattern for a Mario cap online so I Googled it, tweaked the pattern slightly and there you have it a Marine hat for Paxton. My husband said you should have sewed US Marines on the hat.....now he tells me? Too Late but maybe his aunt Sam can buy a pin for us to put on it....he would love that.

Creole Bread Pudding

Look what my momma made for me! Well she didn't exactly make it for me but she brought me and my husband two pieces. I Love My Mom! She brought them over to my house and asked me if we would like some and I said sure knowing my husband probably wouldn't eat his, that just means I get two pieces hehehehe and it was that good. She said its a little bit of work making the sauce so I don't know if I will try it but I sure like eating it and it takes a real pretty picture too.

Creole Bread Pudding
3 cups of packed brown sugar
2 teaspoons of cinnamon
1/2 teaspoon of nutmeg
5 eggs lightly beaten
4 cups of milk
1 cup of whipping cream
5 teaspoons of vanilla
14 slices of bread 1" thick
(optional)1 cup of raisins
(optional)1 1/2 cup of pecan pieces
Preheat oven to 350 degrees, and lightly butter a 13 x 9 pan. In a large bowl blend the sugar, cinnamon and nutmeg. Whisk in the eggs, milk, cream and vanilla. Tear the bread into big bite sized pieces and place in the pan. Pour the mixture over the bread and allow the bread to soak it up, about an hour, refrigerated. Stir the raisins into the bread pudding and top with pecans. Bake uncovered for 1 1/2 hours and prepare Rye Whiskey Sauce.

Rye Whiskey Sauce
2 cups of whipping cream
9 tablespoons sugar
1 1/2 teaspoons of cornstarch
2 tablespoons of cold water
2 egg yolks
1/4 cup of Rye Whiskey
Heat the cream and sugar in a heavy bottom medium size sauce pan over medium high heat until the mixture begins to boil, reduce the heat. Mix the cornstarch and cold water in a small bowl until smooth, slowly whisk into the simmering cream, simmer 2-3 minutes. Put the yolks in a stainless steel bowl and whisk. Slowly whisk 1 cup of hot cream in with the yolks. Pour the yolk mixture into the sauce pan whisking slowly. Cook over medium low heat until it reaches 140 degrees. Remove from heat and pour through a fine strainer. Add the whiskey and keep warm. Scoop the bread pudding into bowls and top with warm sauce. When reheating sauce, be sure to use a medium low temperate so the egg in the sauce doesn't curdle.

Booooo

I saw this ghost on oneprettything.com. I printed the pattern and made a few tiny adjustments so it would be easier to sew. I cut two bottom pieces and placed beads in it to weight it down so he would sit still. His mouth and eye brows I drew on with paint and I added two different size buttons for his Crazy eyes. I took a picture of him and then realized he was naked. I forgot his little neck tie, so back to the scrap pile for a piece of material, BAM, now he is complete. Isn't he just the cutest little guy?

Warrior Cuff

The air is getting cooler and the nights are getting longer, it must be getting close to the haunting hour. I love, love, love Halloween. This year I am working on a Warrior Maiden costume. I made the cuffs first with a pattern from familyfun.go.com. No Sewing. I used fusible hem tape to fold the sides back. The material is the kind that doesn't unravel but it doesn't exactly like irons either, so I covered the material with a cloth and was very gentle with it. I knew I was going to put eyelets in it so I wasn't worried about the sides staying put. Iron, Eyelets and lace it up, that was it, super easy peasy.

Amy's Apron

Amy asked me to make her an apron just like Mama's, so I did, except she wanted it shorter. Now Mama's apron was a couple of shades of pink but I couldn't find any I liked but I found this black fabric that had pink and green in it and it was too stinkin cute, so I bought it. I used an old pattern I had for a dress in the same style and just used the front side of the pattern. I think it looks so cute on her! I told her to put on heels and pearls just like Julia Child. She is cookin now.

Skylynn's May and June Calendar pages. The Mother's day page says "When they placed you in my arms you slipped into my heart". The Fathers day page has a little poem on it. Walk alongside me Daddy and hold my little hand, there are so many things to learn that I don't yet understand, Teach me things to keep me safe from dangers every day, Show me how to do my best at home, at school, at play, Every child needs a gentle hand to guide them as they grow, So walk alongside me Daddy we have a long way to go.

Skylynn's Scrapbook Calendar

Better late than never, OK so I'm really behind. The first page is her cover page with her name on it. The second page is her February (Valentine's Day) page. I have also included her April (Easter), October (Halloween) and November (Thanksgiving) pages. All of these pages are pretty easy because the month dictates what goes on them. August and September are two months I can play around with and try some new designs. I try to make each calendar unique to that special child. September will always be "I see the Fingerprint of God all over him or her", I love that one. Children breath life into a family.

Chocolate , Chocolate, Chocolate Pie

This is a great recipe for small children to make, it is that easy and that good. For a lower calorie pie use 1% milk, low fat whipped topping and sugar free pudding, I used the 1% milk. My husband let my nephews taste test this one, it was their lunch, am I the best Aunt or what????

Chocolate Pie
2 1/2 cups of Milk
8 oz of Whipped topping (thawed)
6 oz Oreo pie crust
2 boxes of instant chocolate pudding (4 serving size)


Whisk milk and 2 boxes of pudding until thickened. Pour half of the pudding into the pie crust. Whisk all of the whipped topping into the remaining pudding, pour into the pie shell and refrigerate for at least an hour. That's it....enjoy!

Time to go Home

Marine Bootcamp Graduation is over. Sam received a certificate for achieving a 297 on the Marine Corp Combat Fitness Test, a Rifle Expert Pin and a National Defense Ribbon. I made the certificate into a pocket to hold the Graduation Ceremony booklet, it lists all the girls graduating with her in it. I purchased copies of the pins she received from militaryvetspx.com. I pleated some green star paper and sewed it down the middle with a solid green behind it and topped it off with a yoyo. When you drive through Parris Island you see the big sign "We Make Marines" I printed it on 8" x 10" matte photo paper. We got our Marine and now it is time to go home. There's No Place Like Home!!! One more picture through the window of our van as were leaving Parris Island and taking our Marine home for a 10 day pass. OohRah.

MCRD Graduation Day

Graduation day starts off with the Band marching and playing. They played "God Bless America" and "Carolina in the Morning", "Nothing could be finer than to be in Carolina in the morning", how cute, we are actually in South Carolina in the morning. Then the troops march in, it is quite a show. After the Graduation the troops will separate and go different ways. Goodbye to new friends, comrades, sisters in bootcamp. These new friends will leave Footprints in Her heart. I purchased the Marines tags from marineparents.com, I taped them down and placed tiny brads through the holes. I purchased the "Friends and Army" paper piecing SVG from myscrapchick.com. I cut it on my Cricut and tweaked the shirt to match the lady Marines. I used some Dimensional Glaze on the boots to make them shiney and rounded. The paper was purchased from marineparents.com.
