Shepard's Pie (Twisted)

I love me some Shepard's Pie but not the calories so I decided to twist the recipe up some. I looked up some recipes that I thought would be close to what I wanted to achieve and then I adjusted them to my taste. I used ground turkey and cauliflower and it was good, five star!

Twisted Shepard's Pie
1 large onion (diced)
1 tablespoon of Parkay butter
1 lb of ground turkey
1 cup of diced carrots
1 cup of diced celery
1/2 teaspoon of salt
1 teaspoon of ground pepper
1 teaspoon of smoked paprika
1 tablespoon of flour
1 large head of cauliflower (trimmed and chopped)
1 tablespoon of Velvetta cheese
1 - 2 cups of shredded Colby cheese

Pre-heat oven to 350 degrees.
Put cauliflower in a microwave proof dish, add about a cup of water and cover with cling wrap, leaving a 1 inch corner uncovered. Microwave for 9 minutes or until very soft. Meanwhile, saute onions in butter, add turkey and cook until no longer pink. Add carrots and celery, stir until heated through, add salt, pepper, paprika and flour, turn the heat off. Drain cauliflower, add Velvetta and mash until it resembles mashed potatoes, you don't want lumpy potatoes, mash again. Pour turkey mixture into a 11 x 9 baking dish, cover with cauliflower and sprinkle cheese on top. Bake for 30 minutes and enjoy.
