Cilantro

I LOVE Pico de Gallo!!! The recipe I have calls for 2 tablespoons of cilantro and it is sold in a bunch, so I always have lots left over and it usually goes in the trash after a few days. But then I got this great big fantastic idea to freeze the left over, really I saw it on Facebook! I took the bunch, cut the bottom stems off, a quick rinse and I starting chopping like a Chef, chop, chop, chop and then one more chop. I like my cilantro pieces very small, so it is a lot of chopping. I placed two spoons of it in my Pico de Gallo and the rest went into a baggie that I had marked with a sharpie. Pop it into the freezer until I need it again. I love that! I thought it might loose it's flavor or be wilted but it came out of the freezer just fine. You could freeze it in ice cube trays with wine or tomato sauce. The possibilities are endless!
