Bacon Cheddar Scalloped Potatoes

I love trying new recipes especially when they turn out this good. This one is scrumdiddlyumptious!!! How can you go wrong with potatoes, cheese and bacon???? I got this recipe from kraftrecipes.com, they send me a newsletter about once a week. This recipe called for maple syrup but I left that out and I adjusted it to make it easier.



Bacon Cheddar Scalloped Potatoes
1 onion (minced)
7 strips of bacon
1 1/4 cup of chicken broth
1/2 cup of milk
4 oz of cream cheese (softened)
5 potatoes sliced thinly
4 cups of cheddar cheese

Cook the bacon, remove and throw the onions in and cook until transparent. Add the broth, milk, cream cheese and stir for about 5 minutes over med heat until cream cheese is melted. Crumble the bacon. Add the bacon and 2 cups of cheddar cheese to the skillet. Spray the bottom of a 13 x 9 pan and layer half of the potatoes in it. Cover with half of the sauce. Layer on the rest of the potatoes and the rest of the sauce, cover with 2 cups of cheddar cheese. Cover and bake for 50 minutes. Uncover and bake for 15 minutes longer.
