Chocolate Mug Cake

What a great idea, chocolate cake in a coffee mug for two. Amy (my daughter) found this recipe and asked me to try it. You mix everything in the mug so clean up is a breeze. We turned the mug over and the cake fell right out, we cut it into two pieces, added a large scoop of ice cream and a small scoop of cool whip. Then Amy drizzled Hershey chocolate syrup over the top, ummm.

4 tablespoons flour 4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons of chocolate bits
1 tablespoon of vanilla
1 large microwave safe
coffee mug
Mix everything in the coffee mug. Put your coffee mug in the microwave and cook three minutes in a 1000 watt microwave. The cake will rise over the top of the mug, but don't be alarmed! The mug is now very hot so allow it to cool slightly, then tip the cake out onto a plate. My microwave is 1065 watts so I should have stopped it at about two minutes but it stilled turned out OK. I will try to get a mug that is straight up and down then I can tip the cake out and cut it lengthwise. This would be pretty with banana slices, strawberries and or chocolate ganache drizzled over the top. We each had one section and it was just enough to satisfy my sweet tooth and I didn't have left over cake sitting around the house. Gotta love it!
